TOMATO BACON JAM

INGREDIENTS //

  • 1 # bacon
  • 28 oz Roma tomato
  • 1 red Onion (rough chop)
  • 1 red pepper (rough chop)
  • 2 jalapeno (rough chop)
  • 1 tbs garlic
  • 2 tsp cayenne
  • 2 tsp paprika
  • 2 tbs oregano
  • 1 tsp red pepper flakes
  • ¼ cup water

Cut bacon into ¼ inch pieces. Render bacon in pot over medium-high heat until almost crispy. Add the rest of the vegetables and cook down for 5 - 10 minutes. Once veggies are tender, add seasonings and water. Let simmer on low heat for 20 - 30 minutes. (It will be thick like a meaty sauce) Use Blender or immersion blender until it reaches a jammy texture. Cool, refrigerate and eat.
